I attempted to replicate my aunt's godly cheese log this evening. She told me what goes in it--cream cheese, Velveeta, chopped nuts of some kind (probably almonds and/or pecans), cayenne pepper, garlic, and paprika to roll it in--but she was rather vague on proportions.

Basically, you just mush up everything but the paprika until it's all mixed up, form it into logs, chill it for a while, and then dust it with paprika.

Attempt #1:

1 package cream cheese (of the Neufchatel variety)
1/2 pound package Velveeta
1/2 cup or so of these seasoned toasted sliced almonds, in Roasted Garlic Caesar flavor (which I knew she didn't use, but they sounded real damn good)
1 tbsp. Gator's Buckshot (contains cayenne... also ground habanero and wasabi powder)
2 tbsp. chopped garlic from a jar (I forgot to get fresh garlic)
1 tbsp. dill (which again, I know she didn't use, but I like dill a whole lot)

Log #1, dusted with straight-up paprika

Verdict: Tasty, but not even close. Definitely needs the fresh garlic. Also not nearly enough Buckshot--I can barely taste it at all. Also probably needs either more Velveeta or less cream cheese. Texture is way off. Probably need to use standard cream cheese instead of the Neufchatel kind. Those seasoned almonds are neat, though.

Logs #2 and #3 from this batch are still in the fridge, undusted. I'll try adding Buckshot to the paprika.
